Decadent Spinach Blueberry Smoothie

use

Are you looking for a great breakfast or after- school snack? Are you looking for a way to add more leafy greens into your diet or want to make sure you are getting all the essential nutrients you need in a day? Make a smoothie! I love smoothies for so many reasons. Many of them are reasons mentioned above. It’s so easy to throw a handful of kale or spinach into a smoothie and just like that you’ve supercharged your smoothie with all the vitamins and fiber in leafy greens.

Smoothies are also great because they are an easy way to get real, whole food nutrition on the go. They are easy to pour into a to-go cup or take with you to the couch or your room to get homework done. There are a million different smoothie combinations out there and so many things that taste amazing together (and some that don’t.) You get to experiment; one of my favorite ways to get creative in the kitchen is to dream up new delicious smoothie ideas. Most of the time I’m stuck working with whatever I can find in my fridge which has led to some pretty nasty tasting combinations but also some amazing discoveries.

Most importantly smoothies are quick and easy, which is essential for the lifestyle of a busy teen. In fact, most of my recipes have five ingredients or less and a prep time of less than 30 minutes. If we have to spend too much time preparing healthy food we aren’t going to do it, we simply don’t have time. Why do you think fast food and easy to grab junk food is so popular?

You can also make smoothies a complete morning meal, especially if you add some protein like peanut butter or Greek yogurt. You can even keep some kind of protein powder on hand, try to get a protein powder that isn’t soy based, most of us get too much soy in our diet anyway and there are other great kinds of protein powders that aren’t soy based.

Most of my smoothies have a few things in common:

  • Some kind of milk, (cow, almond, etc.)
  • Something to add a creamy consistency like a banana or avocado. You can even keep cut up bananas or avocados and store them in your freezer, they keep longer and you’ll always have them as a go to for smoothie making time.
  • Leafy greens, (spinach, kale, swiss chard.)
  • Fruit, you can ask your parents to buy a bunch of frozen berries, these can tend to be cheaper depending on the time of year and keep way longer.
  • I add something frozen, a few ice cubes or frozen berries, this just seems to make it taste better and sometimes tricks me into thinking I’m eating ice cream.

  • Big handful of spinach
  • 1 cup of blueberries (you can use frozen or fresh)
  • 1 heaping tbsp. peanut butter
  • ½ cup of plain Greek yogurt
  • ½ cup of milk of your choice or just enough to get the blender going

Put all of the above ingredients in a blender and BLEND. If you didn’t use frozen berries I like to add a few ice cubes. Pour and enjoy!
